Another Food Allergic Reaction, with no known cause!
Shortly after dinner, one that I made with completely safe ingredients, Alexis complained that her lips started to itch. Within minutes her lips swelled to more than double the size. Immediately we gave her Benedryl which felt like forever before it kicked in. Luckily, the swelling and itching did not go to her throat and her breathing remained fine, but we still can not figure out what the reaction was caused by.
Living with life threatening food allergies does not come with a hand book telling you how, when or why reactions will occur - there is no rhyme or reason so therefore we must remain on high alert at all times. Whew...that can be exausting, but what can you do?
Loaded up on Benedryl, my Sweet Alexis slept peacefully last night (lucky for me Grandma is in town and slept with her and was able to moniter her through the night). Today, she's running around the neighborhood happy as can be...me, still very puzzled about the whole thing but glad it wasn't more serious.

Beware of bakeries making False Allergy claims!

WHAT!!!!! Insurance! Food allergic community be very aware...only trust your safe allergy treats to come from dedicated facilities such as the Sweet Alexis Bakery, Divvies, Enjoy Life or Vermont Nut Free! These trusted companies in addition to those found on http://www.peanutfreeplanet.com/, http://www.foodallergy.org/, or http://www.kidswithfoodallergies.com/, are liscenced manufacturers of allergy safe treats and are produced in dedicated facilities. We not only understand food allergies but what is required by law and the importance in safety.
Unfortunately, do to the rise in popularity of gluten free items many local bakeries are baking without gluten and selling them as gluten "free" when infact they are made in facilities with wheat amount other allergens. Just because one can bake omitting an ingredient does not mean they are safe for the food allergic community due to cross contamination.
We need to get 60 Minutes to do a expose on this...before someone dies by eating a cupcake filled with allergens made by a company looking to make money. Afterall, they have insurance.

Excuse me for getting emotional, but....
As you know, school has started with Alexis entering the 4th grade and Ryan 1st. Although Alexis' situation is much more severe than Ryan's, the school staff, my husband and I seem to have set up a safety system that (thank God) is not only keeping Alexis safe but allowing her to learn and thrive like any other child. In addition, the other children at her grade level and above are extremely supportive, respectful and things almost seem pretty routine.
Ryan on the other hand is entering 1st grade and although has an amazing teacher (in fact Alexis had her for 3 consecutive years and is completely understanding and trained in our situation), this is the big world and he is a different kid. My "Ry Guy" is much more reserved and is extremely sensitive to chaos and uncertainty which of course comes with the first week of school - especially for the little kiddos.
Okay, get to the point.
Ryan, who has allergic reactions to eggs, tree nuts, peanuts, shell fish and mustard is only starting to show signs of anaphylaxis to dairy and his asthma is only illness induced. Therefore, his requirements at school do not warrant the level at which Alexis must be cared for. Nonetheless, Ryan does sit at the allergy safe table and because this is the first week and the staff is on a new schedule there has been some confusion among the little ones who can sit with him, and Ryan is too young to properly articulate his need for space.
My solution for now...I will have lunch with Ryan at school until the routine is set. In addition, the nurse, school psychologist and I thought it be best to make a laminated sign for the table with pictures (versus words) so those not able to read can understand this is a special table free from dairy, eggs and nuts. Great!
Well here it comes - while discussing this with the district nurse, I learned that a new child to our district with a peanut allergy entered a school where there were no other allergic children. The school set up a peanut free table and not only did that child sit alone but other children threw peanuts onto the "safe" table (not clear if the child was present at the time)! Unfortunately, the school does not know who did this so charges can not be filed but other parents of food allergic children learning of this event are refusing safe tables for fear of this type of reaction.
When are people going to learn - THIS IS NOT A LIFE STYLE CHOICE. Just as you did not chose to have brown hair or green eyes (for example), these children with life threatening food allergies did not ask for this and would give anything to not fear for their lives for your right to eat a peanut butter sandwich.
Children with this life threatening food allergies want to live normal lives. They have the right to go to school in a safe and healthy environment and although the violators of this offense where children themselves, tolerance is taught at home. Please, teach your children that a prank like this can be deadly. Teach them to reach out to the child and become their friend, not bully or tease them for something they have absolutely no control over.
Can you imagine what it is like to grow up fearful of food? Imagine sending your precious child off into that big bad world is also extremely painful but they have to learn to take care of themselves for their own sanity. To live in a world that is full of danger and fear and once again, tolerate the fact that pizza, ice cream and peanuts are not going away and they will not invite them to parties or ask to play just because they can't have a slice. Sad.
At least allow them to got to school without fear. Is that too much to ask?

In our case, we were featured for starting a bakery based on Alexis' severe food allergies. As Terri mentions in her article, starting the business was a way for us to give back to the food allergic community by making delicious baked goods made dairy free, egg free, tree nut and peanut free. Not only do we make safe and yummy allergy free food, but also advocate for the food allergic community by creating awareness through articles such as these.
In the Special Needs section of About.com, Terri also features other enterprising moms that also started a business based on their kids disability. These other parents are truly inspirational and the site is definitely worth your time to review. The site is also filled with great information and is a resource for many different conditions including autism, diabetes and much more.

Thank you Oprah....
Basically, the show discussed where our food comes from, how they are processed and how it affects our bodies. As Ms. Winfrey recommended numerous times throughout the program, please review the information and make your own decision but at least consider what is being presented before you.
Both the documentary Food Inc., and Mr. Pollan discuss the manufacturing of food, preservatives and artificial fillers used in products to increase production, growth and shelf life. These manufacturing practices albeit cost effective, make foods that are genetically unrecognizable in comparison to our great grandparents food; chickens grow faster and fatter & food lasts on the shelf for months. At what physical and emotional costs?
The truth is American's are sick...food allergies on the rise, diabetes, autism, heart disease, asthma, obesity and more, all on the rise? Studies show that in countries that do not rely on the convenience of processed foods or genetically engenered farmed animals, are in fact much healthier. There must be a reason, although scientists have no definate answers, one can speculate.
Mr. Michael Pollen has written a book "Food Rules" discussing the use of anitbotics, fillers, preservatives and how low fat diet food can actually make you fat. In the book he suggests some simple rules to follow including not to eat anything your great grandmother wouldn't recognize, for example go-gurts, don't eat products that contain ingredients a fourth grader can not pronounce or to only eat food that eventually spoils - if it's a living thing it will die.
When Sweet Alexis Bakery was born I did consider using preservatives to sustain the product as schools and stores require a 6 month shelf life. Although it would have made my job much easier, it has always been my montra that "we do not know what is making our children sick" so I stuck to my guns and produced Sweet Alexis products without preservatives or fillers. Whenever possible we use organic ingredients, freshly locally grown produce and are proud to say a fourth grader can read our labels.
With the Oprah Winfrey Show coming to an end, the hopes of the Sweet Alexis Bakery appearing on the show to talk about our delicious and safe dairy, egg, tree nut and peanut free products, and more importantly, advocate for the millions of Americans with food allergies, is all but gone. However, we would like to thank Ms. Winfrey for yet another amazing and informative show.

Last year Alexis was profiled in the MedicAlert news letter regarding her allergies and how she wears the MedicAlert bracelet to keep her safe and secure. At the time they asked if they could continue to use her photo and story and we agreed in hopes her story would inspire others. Since then, MedicAlert has added Alexis among others to their home web page, www.medicalert.org. Very exciting and quite an honor!

The Incident...
Last month Alexis had an emergency at school - luckily she's fine but it was rather scary and definitely eye-opening for the entire school staff.
Here's what happened. Alexis' third grade class was having a pancake breakfast that was to celebrate Washington/Presidents Day. Initially, the children would enter the cafeteria and experience making their own pancake, which would be followed later that day by a full blown pancake lunch including sausage and cherry crisp.
As usual, I brought Alexis' own pancake batter. She was the first to make her pancake and went off to drama where the children were allowed to eat the snack. Although the drama room door was open, the over powering smell of the other children eating pancakes with milk in them was enough for her histamines to react, although not seriously (she had her daily dose of anti-histamine medication prior to the event). This of course unknown to me.
After drama, Alexis went off to P.E. where she was to run three laps. Apparently, Alexis began to wheeze on lap two and by lap three was in need of her inhaler. Under watchful eye, Alexis walked back to her classroom. Thankfully her teacher was in the room at the time but they could not find her inhaler. A bit paniced, her teacher brought her to me in the cafeteria. I took one look and litteraly ran to the office. In fact, I don't even rememeber doing so. Upon entering, I yelled at the principal "She needs and inhaler, she needs an inhaler"...the nurse came from another room and promptly unlocked the medicine drawer where thankfully was another students inhaler was stored. The lack of oxygen to her brain was beginning to make her head heart and her lips began to swell. I gave her a double dose of Benedryl and instructed them to call 911. Why no epi pen...it wasn't with her, the bag was in the classroom.
Due to her history of delayed and secondary crashes, the paramedic started an I.V. tube just in case we needed to give medicine to her instantly. Thankfully, we did not have to administer epinephrine but of course would have if needed.
One challenging part that I am still dealing with is that I became upset in front of her. Normally in this type of situation I am calm...not this time, I was shaking and the tears were flowing.
The positive..she's alive and the emergency plan worked although we had errors. Learning from our mistakes we gathered the following Monday with the staff to discuss the event, what we could do better and must be done in the future. Here are the new and improved changes:
1) Prior, Alexis had a full set of medication in her room and a small bag with her lunch containing an epi pen and Benedryl. Now, there is a full set of medicine and inhaler in the following places: a) the office, b) in her lunch box, c) in the classroom.
2) This is the first year she has traveled outside her home room with out a medical bag (small campus, but still not good). Now, when going to different areas on campus, the classroom medical bag will again travel with her to the next destination and given to the adult in charge.
3) Apparently, Alexis had put the inhaler in her desk and forgotten that it was there. Now, she and the teacher are to check the medical bag each day to make sure all the necessary items are in place.
4) Previously we did not have a set of medicine in the office and now we do.
5) At no point is Alexis or any other child allowed to walk alone or go to the bathroom without a buddy. This insures should anything suddenly happen, there is someone available to get help.
After about 4 hours in E.R., Alexis was ready to go. I could tell she was feeling better because was giving the doctor greif about the I.V. in her arm. On the way home she was asking for a play date because she missed school. In fact, she had me call her classroom from E.R. to let them know she was okay.
What an amazing kid I have. I am blessed to have her and Ryan and blessed to be at such a great school where they are working hard so that children like ours can have a "safe" and "normal" education. Thankfully everything turned out fine and we were able to learn from our mistakes, not only for our family but for the food allergic community as well.

Why We Must Remain Hyper-Vigilant
Now like most families of children with life-threatening food allergies, we rarely eat out and when we do we are on constant guard. Because we were in a familiar town, we decided to treat ourselves to lunch at a local restaurant. Actually the night manager's daughter of this particular establishment is one of Alexis' best friends and the kids have eaten there previously under the managers strict supervision.
Knowing our friend, the manager, was not working we decided to bring our own hot dogs for the kids but order french fries as we had in the past. Upon our arrival I knew instantly the fries looked different. When I asked the hostess if the fries were new, she seemed claimed they were the same beer batter fries they always served.
Trusting my instincts, I went to the kitchen myself to ask the chef. He also claimed they were the same fries and there were safe for those with an egg or milk allergy. Explaining we were talking about a life-threatening reaction, I asked to see the ingredients. Product contains; wheat, milk.
Mom knows.
Fortunately, the chef was very nice and make the kids special fries with fresh potatoes. The kids were thrilled, I was a wreck and had medication on the table just in case. Fortunately all was well and we spent the rest of the afternoon collecting sea glass on the beach. Dad even found a real shark tooth!
Trust your instincts and beware of those beer batter fries!

Dairy, Egg, Tree nut & Peanut Free Cookie Perfect for Valentine's Day Decorating Parties!!!
Here's the story...ever since Alexis started school I've been struggling finding a good cookie that could be used for "cookie decorating parties". Baking the traditional "Roll Out" or "Cut" cookie was quite a challenging for me since I could not use egg as a binder. Over the years I've experimented but the cookies usually fell apart upon arrival and wouldn't you know it, I was always volunteering to supply the class "safe" cookies at all of the holiday parties so all the kids were eating the same cookie and Alexis did not feel left out. Weeks before the event I would begin to stress and then would procrastinate baking something at the last minute. I would usually make a double batch of whatever recipe I was trying to ensure some cookies would be good for the party. This cookie was my nemesis, to say the least.
Well, this past holiday season I tried a new recipe and with a few changes and tweaks I came up with a winner.
